The Vaults is best described as a stylish restaurant and suave lounge bar that would make the appellation 'chic' a more fitting one. Situated in the Jewellery Quarter, the interior alone merits a visit, embellished with polished wooden flooring, bespoke furniture and a dusky autumnal colour palette; the arched alcoves bring in a more intimate feel.

Senior Chef Daniel Humphries learned his trade under Sean Penn, and is now sharing his culinary creations at The Vaults. The Vaults menus of classic and contemporary dishes are a medley of fresh flavours, with starters such as the salmon and prawn fishcake, and pan-fried chicken livers and mushrooms with braised leeks with piquant jus. After tackling these there are some delightful main courses to follow, like pork escalope, and seared Scottish salmon and fondant potatoes with spinach, mustard honey and spring onion vinaigrette.
